Exclusively crafted from grapes of our estate, our 2021 vintage yielded 2,600 bottles of Cabernet Sauvignon "Reserva Directorio," a wine of intense color with aromas of black fruits such as plum and cassis. It boasts a full body on the palate, well-integrated oak, smooth tannins, and a complex, persistent finish.

CLIMATE
The 2021 season in Caone presented ideal climatic conditions for producing high-quality Cabernet Sauvignon grapes. Cool, stable temperatures combined with scarce rainfall allowed the vineyards to reach optimal and complete ripeness, resulting in a superior quality harvest. Despite occasional rains, the climate remained mostly dry during critical periods, enabling healthy grape development without disease issues. The cool temperatures promoted a slow and gradual maturation, producing thicker skins and exceptional concentration of flavors and tannins. Additionally, the absence of extreme heat helped maintain balanced acidity, further enhancing grape quality.
HARVEST
Hand-harvested starting March 7, 2021, the results exceeded all expectations. The favorable climate conditions, combined with meticulous vineyard work, led to an outstanding harvest. Wines from this vintage are expected to deliver deep flavors, well-structured tannins, and balanced acidity, making them ideal for barrel aging.
VINIFICATION
Grapes were processed the same day of harvest. After destemming, they underwent a cold pre-fermentation maceration in stainless steel tanks for 3 to 4 days to extract maximum aromatic complexity. Once maceration finished, selected yeasts were inoculated to start alcoholic fermentation. During fermentation, gentle pump-overs were carried out for 7 days to extract the desired varietal notes. A post-fermentation maceration followed for 7 days, completing a total maceration period of 24 days. Finally, the wine was aged in French oak barrels for 16 months prior to bottling, with a gentle filtration.
SOIL
Our Reserva Directorio originates from a select vineyard block planted in 2015, characterized by gentle slopes and invigorating terroir where the vines develop deep roots. The soil texture is predominantly loam, with a slightly acidic pH of 5.9. Organic matter content is around 3%, requiring ongoing care to maintain optimal levels.
