During the 2021 season, Caone experienced ideal climatic conditions for producing high-quality Cabernet Sauvignon grapes. The cool and stable temperatures, along with scarce rainfall, allowed the vineyards to reach optimal and complete ripeness, resulting in a superior quality harvest.
Our boutique vineyard, spanning only 10 hectares, yielded approximately 6,000 kgs per hectare during the 2021 harvest—a controlled production focused primarily on grape quality, with which we crafted three distinct Cabernet Sauvignons: Piedras de Auque, Hacienda Caone, and Reserva Directorio.
While our three 2021 labels stand out as fresh and fruity reds, typical of a cold-climate Cabernet, each possesses unique characteristics:
-
Piedras de Auque presents itself as a fresher wine with higher acidity, vertical on the palate, and since it is not aged in oak barrels, it preserves the aromas and fruity notes of our terroir. For this Cabernet, we used grapes from two parcels planted in 2017 and 2018. Production reached 14,610 bottles.
-
Hacienda Caone, considered by some as the most balanced of the three, is a well-rounded wine that maintains freshness and acidity, balanced with just the right amount of oak notes. For this Cabernet, we used grapes from parcels planted in 2015 and 2017, with a portion of the blend aged for 12 months in barrels. We produced 12,920 bottles of this label.
-
Reserva Directorio, our select wine, is made exclusively from grapes of a reserved parcel planted in 2015, whose age provides the vineyard’s best quality. This wine was entirely aged for 16 months in French oak barrels, which gave it greater body and oak character. Production of this label is limited to just 2,600 bottles.
