Hacienda Caone 2021 – Discover Its Winemaking Process.

Produced exclusively from grapes grown in our vineyard, our 2021 harvest yielded 6,920 bottles of our Cabernet Sauvignon Hacienda Caone. This wine is earthy on the nose with ripe black fruit notes; its intense ruby color delivers a complex palate softly enhanced by just the right touch of oak.

CLIMATE

During the 2021 season, Caone experienced ideal climatic conditions for producing high-quality Cabernet Sauvignon grapes. Cool and stable temperatures, combined with scarce rainfall, allowed the vineyards to reach optimal and complete ripeness, resulting in a superior-quality harvest. Despite occasional rains, the climate remained mostly dry during critical periods, allowing the grapes to develop free from disease. The cool temperatures encouraged slow and gradual ripening, producing thicker skins and exceptional concentration of flavors and tannins. Additionally, the absence of extreme heat helped the grapes maintain balanced acidity, further enhancing grape quality.

HARVEST

The grapes were hand-harvested, beginning on March 7, 2021, and the results exceeded all expectations. The combination of favorable climatic conditions and meticulous vineyard work produced an exceptional harvest. Wines from this vintage are expected to present deep flavors, well-structured tannins, and balanced acidity, making them suitable for barrel aging.

VINIFICATION

The grapes were processed on the same day as harvest. After destemming, the must was kept in stainless steel tanks for 3 to 4 days of cold pre-fermentation maceration to extract maximum aromas and enhance wine complexity. Once maceration was complete, selected yeasts were inoculated to begin alcoholic fermentation. Gentle pump-overs were performed over 7 days to extract the ideal notes from the grapes. Following fermentation, a 7-day post-fermentation maceration was carried out, completing a total maceration period of 20 days. Finally, 10% of this wine was aged in French oak barrels for 12 months prior to bottling.

SOIL

Our Hacienda Caone originates from vineyard blocks planted in 2015 and 2017, featuring a marked slope with southwest exposure that benefits from more afternoon sunlight. The soil is primarily loamy, with a slightly acidic pH of 5.9. Organic matter content is around 3%, requiring ongoing management to maintain optimal levels.
